Blog Meet Up...

I was so excited to finally meet my bloggy friend Lauren yesterday. We both drove a little over an hour to meet for lunch at Chili's. We talked and talked and talked  and had a FAB time :)

I actually met Lauren in Atlanta when we went to see Beth Moore. She actually took several pictures for me...but we really didn't know each other then. After reading our blogs, we realized that we both lived in Florida and planned a blog meet up.


I am SO thankful to have met Lauren...we are already planning our next get together :)

What Made My Day...

I have been having a really hard time at work...not only are we short-staffed but there is a huge negative energy circulating in my office.

BUT...I received this email yesterday from one of our teachers and it couldn't have come at a better time.

Mrs. Knight,

I wanted to tell you that I appreciated the questions and feedback you gave me during the post-observation conference. I think one of the qualities of a great leader is that they listen and are committed to making an organization better through the effective use of resources and people. From your questions and observations its clear to me that you possess that quality.

When I worked in North Carolina, three out of the four principals at my school won "Principal of the Year" in the county and then the state. They led with a sense of purpose, a sense of humor, and a real understanding of what is most important to improve a school. You are just like them, and I appreciate the support you consistently give me and other faculty members.

I know this compliment seems to come out of nowhere, but another Assistant Principal asked me to do an online evaluation of her for her leadership class, and as I filled it out for her and reflected on how she works to improve the school every day and support teachers in the classroom, I recalled that you do the same. I also know its a tough, sometimes thankless job, so I just wanted to say, thank you.

Talk about MAKING my day :)

Yeah Baby!!!

This past weekend we went to a costume party...well, we didn't KNOW it was a costume party until we showed up.

Our friends were dressed up when we walked in the door, so she proceeded to pull out all these Halloween costumes and insisted we choose one :)

But our friends Blaise and Julie NEVER disappoint...they ALWAYS have the best costumes!!

Tortilla Soup Recipe...

I posted on facebook this evening that I made a DELICIOUS pot of tortilla soup. I had so many people ask for the recipe and one person even recommended I post it here on my blog.

So here ya go!!!

I can't take all the credit though, my grandma (Mother) shared this recipe with me and it is sooooo good :)


You will need either a whole fryer or six large chicken breasts.
Boil the chicken in about two quarts of water. When it is done, remove from broth and chop chicken into small pieces. Set aside.

1 TBS oil

2 cloves garlic

1 medium onion

1 16 oz can of black beans (drained)

1 16 oz can stewed tomatoes ( I use Rotel tomatoes)

1 15oz can whole kernel corn undrained

1 1/2 tsp ground cumin

1/2 tsp black pepper

2 chicken bouillon cubes

1 Tbs dried cilantro leaves

Salt to taste.

Sauté the chopped onions and garlic in the oil. Add this to your simmering chicken broth. Add the bouillon cubes, corn and stewed tomatoes, cumin, cilantro, salt, and pepper. Last add the chopped chicken. Bring to a boil, reduce heat and simmer for about 15 to 20 minutes .

Flour tortillas, or chips, sour cream, Monterey jack cheese or cheddar, are
the extras. Picante sauce and jalapenos are for those that might like a little more spice.

Now make yourself a bowl, snuggle up with your sweetie, and ENJOY!

White Pumpkins...

I thought I would try and create some pumpkins like the one I showed you in THIS post.

I found these cute little pumpkins...



I had some left over cream flat paint that I used for our bathroom, so I pulled out the paintbrush and got busy...


I got nervous when it came time to use the black permanent marker to create the spider web effect or the wood grain effect, so I just left these pumpkins white :)




Overall, I think my white pumpkins turned out great :)

Pumpkin Ideas...

Each month we have a get-together with about five other couples. This month at our get-together, we plan to carve pumpkins for the upcoming Halloween holiday.

Of course, I don't want to carve a traditional pumpkin, so I have been browsing for ideas on how to make my pumpkin different.

King of Pop...

Tonight the hubby and I will be going to see the Jacksonville Symphony perform hits from the King of Pop, Michael Jackson.


I've been looking forward to this performance for some time now :) One of the main reasons is because an alum from the high school where I work will be performing. Read the write up about this talented young man...


Taking center stage in the Michael Jackson tribute is James Delisco, a native of Jacksonville. He’s been crowned "The Entertainer" by Wayne Newton and is described as a cross between Michael Jackson, Lenny Kravitz, Stevie Wonder, James Brown, Elvis Presley, Sammy Davis Jr. and Usher, delivering powerful vocals, innovative dance moves and undeniable stage presence.

I can hardly wait!!!

Dining Room Chairs...

We inherited our dining room table and although we hardly use it all, I really adore it.



The only problem is that we only have FOUR chairs :( I would really like to have at least 6 chairs, possibly 8.

I was browsing sites and looking at drop leaf tables and found quite a few chairs that I really like.




What do you think of these counter high dining chairs? I think I like the first one best...they are simple, but I like the detail on the back.

Special Milk Glass...

I started collecting milk glass last year. I just love how pretty and simple it is. I've  collected quite a few pieces...





My grandmother (Mother) gave me these two pieces to add to my collection...


The one on the left is a toothpick holder and the one on the right is a candle holder. Both pieces belonged to my great-grandmother.



Now that's what I call special milk glass :)

My Nanny...

I am SO sentimental and just love inheriting things that belonged to my family. My mom brought this table to me this past weekend...


It belonged to my great-grandmother, Nanny.




Check out the detail in the legs...


The table fit perfectly in our bedroom!


And it makes it even MORE perfect because it was my Nanny's :)

In Bloom...

Mom ALWAYS brings me plants from her yard each time she visits. And this time she brought me two trees!!!

I'm not sure what this first one is...but she said it has pretty hot pink flowers when it blooms.


I planted it right behind one of our pool chairs and I think with the shade from this tree (when it gets a little bigger), it will make the perfect place to read a book.

I have wanted this next tree for some time now...

It's a firecracker red crepe myrtle. It is in shock right now from the trip from Houston to Jacksonville, but with a little TLC, I think it will be BEAUTIFUL!

Thanks mom...hopefully the next time you visit these two trees will be in bloom :)

Game Day Cupcakes...

I found this awesome cupcake place in Jacksonville...Desserts by McDermott.


She has the BEST flavors and even delivers :)

For game day yesterday, I had her make some Florida State and  University of Florida cupcakes.


The FSU cupcakes were baked apple and the UF cupcakes were spiced pumpkin with dark chocolate.

Sunrise...

David woke me up on Sunday morning at 6:00 a.m. Normally I would have been furious at him for waking me up that early on the weekend, but to my surprise, he wanted to take Kodi and I to the beach to watch the sunrise.


The weather was cool and the sunrise was just absolutely gorgeous...


There were quite a lot of people walking along the beach and soaking up the beautiful day...


Kodi had a great time too...


He loves running full blast toward the ocean...
