The DH went grocery shopping this weekend and everything he bought was HEALTHY!!! We have been on an exercising kick since New Years Day and we are now in FULL force of eating right too.
He bought veggies, fruits, and nothing but chicken!!

So I went on a quest to find some
different, yet healthy, chicken recipes. I went to the
Campbells Soup website and found a TON of recipes.
Last night we tried Skillet Garlic Chicken. I am not the best cook in the world, but I do not mind saying that this meal was SO good, it could have been served at a fine restaurant.
Here are the ingredients:
1/4 teaspoon ground sage
1/4 teaspoon dried thyme leavescrushed
4 skinless, boneless chicken breast half
Vegetable cooking spray
2 cloves garlic, minced
1 can (10 3/4 ounces) Campbell's® Healthy Request Cream of Chicken Soup
1/2 cup water
Parslied Rice
(I added one small onion, one bell pepper, a few carrots and broccoli.)
Here are the instructions:
Stir the sage and thyme in a small bowl. Season the chicken with the sage mixture.
Spray a 12-inch nonstick skillet with the cooking spray and heat over medium heat for 1 minute. Add the chicken and cook for 15 minutes or until the chicken is well browned on both sides and cooked through (this is where I added in the onion and bell pepper). Remove the chicken from the skillet and keep warm. Add the garlic to the skillet and cook and stir until lightly browned. Stir in the soup and water and cook until the mixture is hot and bubbling (this is where I added in the rest of the veggies). Serve the sauce over the chicken with the Parslied Rice.
Parslied Rice: Toss 4 cups hot cooked long-grain brown rice with 1 teaspoon chopped fresh parsley.
